Fun Shooting

Out shooting some Senior photos tonight. Lexi and Bailey were some of my cell group girls when they were in Jr. High. Their wonderful mom Rena was able to take this fun pic for me.

Where does the time go? I can’t believe you beautiful girls are all grown up. Love you both!

A Little Lola

Today was one of those clean the house, laundry, ironing, getting better from being sick catch-up days. Lola watched me, with her nose in the blankets, from “her” big red chair most of the morning. Tilting her head like so only when I suggested a W.A.L.K Such a sweet little doggy friend I have. Today we worked on “heal” on our walk, and she is picking it up real quick. Now it’s up to me to be consistent. Yes, I know I post a lot about Lola, but until we have kids, she’s our little Doggy Kiddo and we sure love her!

Portland OR.

A few weeks ago. My Mom, Sister Annie, and I went on a road trip to Portland to visit John and Johanna and take Annie to run a half marathon there. It was a great trip and a wonderful time to be with family. Even though Annie forgot her shoes and had to run a half marathon in NEW unbroken shoes, the girls had a lot of fun.



After the Race we went to the Portland Saturday Market. Us Girls just had a nice day shopping and seeing the city. Of Course lots of Laughs of as usual.

These hand-made leather hair flowers were so cute and we even talked Johanna into getting one! (The saver of the family)

Some of the cutest Pottery. I have always liked these frogs..(yes frogs are a kind of vase.. but maybe it’s spelled differently?!)You two are always trouble together. hahahah

I love all the unique streets and funky colors of Downtown Portland. I bet the portrait photographers have a blast with that!

 They have the coolest little place on the edge of downtown. They are so happy in Portland.

It was a great  trip with my Mom and Sis. Love and treasure all the time we get together. It is a gift. Goodbye Portland it was nice seeing you.

Recipe to TRY!

Well I know I have been slacking on the blog posts! I have a whole bunch of photos waiting to go up. After I get past some business deadlines I will be back at it! But this just couldn’t wait. I love me some BBQ chicken and this homemade sauce is a fun spin off of BBQ and has a little pep to it as well. Here is the fabulous recipe!

For the Sauce

Olive oil for cooking

2.5 Tbl. finely chopped onion

1 Garlic clove, minced (I used a spoon-full of pre-minced garlic from the jar)

3/4 Cup Cola ( I used about a Cup and I only had Pepsi)

1/3 Cup ketchup

1 Tbl. cider vinegar

2 Tbl. Worcestershire sauce

1.5 tsp. Chili powder

For the Rub

1.5 Tbl. Dark brown sugar

1Tbl. sweet paprika ( I used regular, and I think I would use less paprika next time)

1/2 tsp. salt

1/2 teaspoon ground cumin

3 Chicken Breasts cut in half.

First cook you cook up the yummy sauce:

Saute the onions and garlic for a few minutes in some olive oil, stirring occasionally. Stir in Cola and the rest of the sauce ingredients and bring to a boil. Reduce heat and simmer 15 minutes or until the sauce reduces to about 3/4 cup. It will get nice and thick like BBQ sauce. Pour some sauce into a cup for basting the chicken, reserve the rest for dinner time!

Next make up the chicken rub:

Combine all ingredients, stirring well. Rub spice mixture evenly over both sides of chicken.

Now you can place those bad boys on the preheated grill and baste the top with the sauce. Cook 5 mins, then flip and baste the other side. Don’t be shy with that sauce either!

I highly recommend, thought it was scrumptious!

You can serve it with Peppered Lime Rice, Just cook up some rice squeeze a lime over the top, stir it up and top with lots of salt and PEPPER! I got hooked on this when I went to Thailand, they served rice with salt and pepper on top and a lime on the side! YUM.
